We all love good, delicious homemade ice cream, but we really don't like the work of making it. This recipe covers both the delicious and the easy-to-make options.
Guinness is one of those things that we just about have used in various ways for cooking. But using it to make some stout ice cream is probably my favorite way.
It is bursting with the robust flavor of the Guinness with a rich, smooth texture.
This recipe requires no ice cream maker, just like my rum and raisin ice cream recipe, and can be on your table, with a slice of black cake in no time. This makes it a perfect summer treat.
So here's my step-by-step recipe for making the yummiest Guinness stout ice cream.
What Stout to choose?
I know a lot of people shy away from drinking stouts because of the taste. But it really is a great option to make ice cream. We do want to avoid the ones that might be very robust in flavor.
The most important thing to consider when choosing your stout is its alcohol content. A higher ABV (alcohol by volume) means less water will be left behind after fermentation, which leads to a drier beer. If you want a sweeter beer, look for stouts with lower percentages of malt sugars.
There are many different brands and different types of stouts, but I personally prefer to use Guinness.
But I think a chocolate stout will also be a great option to use.
Ingredients to make Guinness ice cream
This ingredients list is a short one. We are actually going to have three ingredients be our major ones. It can go to four if you want to, but that's still a short and sweet list.
- Heavy cream.
- Sweetened condensed milk.
- Guinness stout.
- Vanilla extract (optional).
Equipment
- Mixer - this can be your kitchen aid with the whisk or you can use a hand mixer.
- Freezer safe airtight container or a loaf pan.
- Plastic wrap.
How to make stout ice cream
One thing I learned with making frozen desserts, if you are not using an ice cream machine, then your ingredients should be as cold as possible. So I usually put everything in the fridge overnight.
I use my stand mixer, but if you don't have that, you can use a large bowl and your hand mixer.
Take the heavy whipping cream and whip it on medium speed. We want to whip it till some nice soft peaks are formed.
In another medium bowl, mix together the cold condensed milk and the stout beer.
Slowly, take the milk mixture and add it to the whipped cream. Do this at a medium speed. Do not mix too much. Just make it combine.
Then up the speed to high and continue whisking. The mixture would become thick and creamy.
Add vanilla extract if using.
Now put the ice cream mixture into your container.
If you are doing any add-ins, now is the time to place them.
Cover tightly. You can use a pan and use plastic wrap to cover it. Make sure it's pressed down so that no air can get in. We do not want any ice crystals to form.
Let the mixture sit in the freezer for at least 8 hours until nice and firm.
Serve with your favorite toppings.
Topping ideas for ice cream:
If you want to add some extra pizzaz to your ice cream here are some great options to try. These can also work as add-ins.
- Salted pretzels.
- Dark chocolate.
- Chocolate sprinkles.
- Shaved coconut.
- Candied nuts.
- Milk Chocolate pieces.
- Toffee.
- Chocolate fudge sauce.
How to serve
I love this in a cone. And a nice chocolate waffle cone really makes it a great treat. Especially with any of the toppings options listed above.
It would also make a great Guinness float.
How long does it last?
Once you have this in a freezer-proof container, it can stay there for up to 2 months. Try to keep it away from the front of the freezer where the temperature fluctuates.
Can this be made ahead?
It is best to make this ahead of time. It would give it time to get as firm as possible. Just make sure that all your ingredients are cold to start with as it will help it come together faster.
