If you are looking for that refreshing drink to cool you down through the hot
days, then this Ginger Pineapple Lemonade is it. A refreshing mix of citrus
juices, with a gingery syrup and some cooling seltzer, makes it the perfect
drink for the hot summer days.
It's that time when we need to grab the extra sunscreen and pump the AC up. Summer is here!!
This ginger pineapple lemonade saves lives. I assure you, when that heat hits you where you are, you are going to grab this amazingly refreshing lemonade, pour it over some ice cubes, and be very happy you did.
I got hooked on ginger pineapple getting fresh juice from the Jamaican restaurants. Everybody has their mix, some with more ginger, and more pineapple. But I think my mixture has the perfect balance with a few additional treats.
This is the FIRST drink every member of my family devoured in less than an hour AND it has NO alcohol. Like the heat we are getting, this is record-breaking!! I can't really put into words how refreshing this drink is. It truly hits the spot. You just have to try it.

Ingredients for this juice
What I love about this juice is that it uses fresh ingredients.
The recipe card has the full list of ingredients with the quantities needed.
Examine and wash your ginger cutting off any parts that might be rotting. Slice the ginger into thin slithers.
In a deep pan, add sugar, water, and ginger, and bring that mixture to a boil. Stir continuously till the sugar is dissolved.
Lower to a simmer, and let that go for another 10 minutes.
Remove from the heat and let sit for 10 minutes to let the flavors continue to seep.
Strain the mixture off and let the syrup get to room temperature. You can also put it in the fridge.
In a large pitcher, mix all the juices.
Add in the simple syrup, and sparkling water and combine well.
Pour over ice and serve!
It is good for you. Ginger is a Caribbean staple to use for any ailment. It is great for your digestive system.
Pineapple not only contains vitamin C but also copper, beta carotene, and B6. It also supports the digestive system and helps to boost immunity and inflammation.
If you are concerned about the sugar in the syrup. There are few sugar replacements out there. Or use your favorite sweetener.

And don't be afraid to add some rum to the mix. But don't tell my mom I said to do that!!

Ingredients for this juice
What I love about this juice is that it uses fresh ingredients.
- Limes/Lemons - fresh lemons and limes, really help to bring the citrus greatness to this drink.
- Pineapple juice - I opted to use unsweetened pineapple juice. Fresh ripe pineapple can surely be used but you will need to take into consideration the sugar levels since we are using a simple ginger syrup. Just make sure that you blend and strain and have enough juice to match the required amount.
- Fresh ginger - Wash well and remove any damaged pieces of the ginger. Slice it into thin pieces to ensure the ginger infuses the simple syrup well.
- Sparkling water - I preferably use a lemon/lime flavor to enhance the drink. But to be honest it's optional. You can mix everything minus the seltzer, and taste it and if it is too strong for you then add seltzer as needed. You can even use ginger ale.
- Garnishes - maraschino cherries, pineapple chunks or fresh pineapple wedges, lemon slices, and fresh herbs like mint leaves

Additions
- Adding turmeric to this is great and you now have a pineapple ginger turmeric lemonade. But don't add too much. You can also use turmeric powder. I just sprinkle some in.
- I love the chilled seltzer added to this. If you happen to want just juice you can omit it. Or add as needed.
- Instead of seltzer use champagne. Kind of like a mimosa. Pour the drink halfway then fill the rest with your favorite bubbly.
- Some fresh mint leaves in the serving glasses will be a nice flavor addition.
