Beetroot Punch

An easy Caribbean-style punch made with fresh beetroot, milk, and a hint of lime and ginger for a rich, creamy, slightly earthy drink that’s perfect chilled or over ice.

Ingredients
  

To make beet juice:
  • 2 medium to large beets peeled and tops removed
  • cups water or just enough to cover the beets
  • ½ inch piece of fresh ginger
To make the punch:
  • Juice from ½ lime
  • ¾ cup whole milk
  • 3 tablespoons condensed milk or to taste
  • 2 dashes Angostura bitters

Method
 

To make beet juice:
  1. Wash, peel, and chop the beets into small cubes.
  2. Add beets and water to a blender and blend until smooth.
  3. Add the ginger and blend again.
  4. (Optional) Strain the mixture through a fine mesh strainer to remove any pulp.
  5. Chill until ready to use or move on to making the punch.
To make beetroot punch:
  1. Combine the beet juice with milk, lime juice, condensed milk, and bitters.
  2. Stir well and adjust sweetness to your liking.
  3. Serve chilled or over ice.
