Method
To make beet juice:
- Wash, peel, and chop the beets into small cubes.
- Add beets and water to a blender and blend until smooth.
- Add the ginger and blend again.
- (Optional) Strain the mixture through a fine mesh strainer to remove any pulp.
- Chill until ready to use or move on to making the punch.
To make beetroot punch:
- Combine the beet juice with milk, lime juice, condensed milk, and bitters.
- Stir well and adjust sweetness to your liking.
- Serve chilled or over ice.
