Butter Cassava

A delicious and easy side recipe using one of the Caribbean's favorite ground provision, cassava (yuca). Quick and easy side option with many health benefits.

Ingredients
  

  • 1 cup grated carrots
  • 1 teaspoon salt
  • 1.5 lbs frozen Cassava I used Goya brand
  • 2 tablespoons butter
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon black pepper

Method
 

  1. Put water to boil with salt
  2. When boiling, add cassava and boil till tender (about 8 - 10 mins)
  3. Strain and leave to cool for about 5 mins (or cool enough to touch)
  4. Cube cassava and set aside
  5. In a pot melt butter and add grated carrots
  6. Add cubed cassava to mixture
  7. Add garlic powder, onion powder and black pepper
  8. Mix all together
  9. Taste for seasonings (add more butter if you want a smoother texture)
