Caribbean Christmas ham

A delicious recipe for moist and juicy Caribbean Christmas Ham. It’s easy to cook and tastes great with the tropical flavors infused while baking.

Ingredients
  

For glaze
  • 1 cup orange juice or pineapple juice
  • ½ cup brown sugar
  • ¼ cup vinegar
  • ½ tablespoon grated fresh ginger
  • 1 tablespoon mustard
For ham
  • 5 pound ham bone in
  • Whole cloves
  • Pineapple rings

Method
 

For glaze
  1. Combine ingredients for the glaze and set aside.
For ham
  1. Place ham skin side up in a roasting pan. Bake at 325F for 2 hours.
  2. Remove skin from ham and score fat in diamond shapes
  3. Stick cloves into ham
  4. Combine glaze mixture and spread over ham
  5. Return to oven and bake for another 20 - 30 minutes, basting ham occasionally.
  6. Add pineapple rings to ham close to the last baste of ham

Notes

If using salted/cured ham you will need to desalt it prior to cooking. Soak it submerged in water for 24 hours, then remove from liquid and pat dry.
