Caribbean Style Rock Buns

Rock buns are a sweet Caribbean treat with a crumbly texture and warm spice. Made with pantry staples and just a few steps, they’re perfect for tea time or a cozy evening snack.

Ingredients
  

Dry Ingredients
  • 1 ⅔ cups all-purpose flour
  • ¾ cup granulated sugar
  • 2 teaspoons baking powder
  • ¼ teaspoon salt
  • ¼ teaspoon ground allspice
  • Fat
  • 2 ounces margarine semi-firm, cubed
Wet Ingredients
  • 1 egg slightly beaten
  • 3 tablespoons milk
  • Add-ins
  • ½ cup raisins

Method
 

  1. Preheat your oven to 350°F (175°C). Grease a baking sheet and set aside.
  2. Rub margarine into flour: In a large bowl, add the cubed margarine to the flour. Use your fingertips to rub it in until the mixture resembles coarse crumbs.
  3. Mix dry ingredients: Stir in the sugar, baking powder, salt, and allspice.
  4. Combine wet ingredients: In a separate bowl, mix the egg and milk.
  5. Form the dough: Pour the egg-milk mixture into the dry mixture and stir until mostly combined.
  6. Add raisins: Fold in the raisins and mix until a soft dough forms.
  7. Shape and bake: Drop heaping spoonfuls of dough onto the prepared baking sheet, leaving space between each bun.
  8. Bake for 20–25 minutes or until golden brown. Remove and let cool slightly before serving.
