This Caribbean carrot juice is a refreshing combination of carrot juice with Caribbean spices of nutmeg and cinnamon with a hint of ginger. This is a delicious carrot juice drink that is full of minerals and vitamins and tastes amazing.

Ingredients
  

  • 1 1/2 pounds carrots
  • 1/2 cup to 3/4 cups of milk
  • 1/2 teaspoon nutmeg
  • 1 knob ginger approximately 3oz
  • 1 teaspoon vanilla extract or mixed essence
  • 3 cups water
  • Sugar optional

Method
 

  1. Wash and remove the head and ends of the carrots and then peel them.
  2. Chop the carrots into about 2-inch pieces, along with the ginger into pieces.
  3. Add to blender, then add the water to the blender and blend till extremely fine.
  4. Pour into a sieve and/or with a cheesecloth, squeeze out all the juice from the blended carrot mixture.
  5. Combine milk, carrot juice, nutmeg, and essence and mix well.
  6. Served chilled or over ice.

Notes

If you want to make carrot juice without milk: Combine everything else but the milk and sweeten to your liking. Take half a lime and squeeze the juice and mix. Serve chilled.
