Ingredients
  

  • 1 cup uncooked long-grain rice or 2 cups cooked rice
  • Water for boiling rice
  • 5 tablespoons coconut oil divided
  • 1 small onion chopped
  • 1/4 cup chopped celery
  • 1/4 cup chopped orange bell pepper
  • 1/4 cup chopped red bell pepper
  • 4 cloves garlic minced
  • 1/2 cup grated carrot
  • 1/4 teaspoon freshly grated ginger
  • 1/2 cup cubed ham
  • 1 to 3 tablespoons soy sauce to taste
  • 1/4 cup black olives chopped
  • 1/4 cup dried cranberries chopped
  • 1/4 cup raisins chopped
  • 1/2 teaspoon salt
  • Chopped parsley for garnish

Method
 

  1. If using uncooked rice, boil the rice in water until tender. Drain well and set aside. You should have about 2 cups of cooked rice.
  2. Heat a large pan over medium-high heat and add 3 tablespoons of the coconut oil.
  3. Add the onion, garlic, celery, bell peppers, and ginger. Sauté until the onion is translucent.
  4. Add the grated carrot and cook for about 2 minutes.
  5. Add the ham and cook until heated through.
  6. Add the cooked rice, 1 tablespoon of soy sauce, the salt, and the remaining 2 tablespoons of coconut oil. Toss until everything is well combined and heated through. Taste and add more soy sauce as needed.
  7. Remove from the heat and stir in the raisins, cranberries, and black olives.
  8. Garnish with chopped parsley and serve.
