Coconut Bake (Roast Bake)

Coconut (Roast) bake is a quasi bread made with coconut milk and grated coconut and roasted in the oven. Perfect for breakfast or a snack

Ingredients
  

  • 4 cups of flour
  • 1/2 teaspoon salt
  • 4 teaspoons baking powder
  • 2 tablespoons Crisco/cookeen
  • 4 tablespoons margarine
  • 1/2 teaspoon sugar
  • 1/4 cups grated coconut
  • 1 cup coconut milk

Method
 

  1. Sift flour, baking powder and salt in a mixing bowl
  2. Add sugar, and fat and mix in with a fork so that it resembles fine bread crumbs
  3. Make a well in the flour mixture and add coconut milk and mix till combined.
  4. Add coconut husk and knead into a smooth dough
  5. Leave to sit for about 20 minutes
  6. Roll dough out and place on greased baking sheet
  7. Pierce lightly with a fork
  8. Bake at 350 degrees for 30 minutes
