- Preheat the oven to 400°F. Grease a baking sheet or line it with parchment paper.
- In a large bowl, whisk together the flour, cinnamon, nutmeg, and baking powder.
- Cream the butter and sugar until light and fluffy. Add the egg and mix until combined.
- Add the dry ingredients to the creamed mixture and mix until combined.
- Stir in the grated coconut, vanilla, and lime zest, if using. Mix until a stiff dough forms.
- Drop tablespoonfuls of dough onto the prepared baking sheet in rough heaps, leaving a little space between each.
- Bake for 18–20 minutes, or until lightly golden brown and set around the edges.
- Brush the coconut drops with sugar glaze or ginger simple syrup while hot.

Notes
Some people like to add raisins. You can add 1/2 cup raisins when you are mixing in your grated coconut.
You can add some cherries to the top of each mound before baking.
