On medium-high heat bring water and milk to boil in a medium-sized pot (that has a cover)
Lower to a low boil and add okra and boil till tender.
Also add pumpkin, if using.
Boil until pumpkin is tender, okra is pink
Add your peas and carrots now if using.
Remove from heat and add start adding cornmeal in batches.
Make sure to mix quickly to make as smooth, creamy consistency as possible
Once all combined, add 1/3 cup hot water and cover on a low temperature to steam for about 5 minutes (add more water if needed)
Add mixture to well-greased pie dish
Smoothen out in the dish to fill it out
Using butter, spread on the top and continue to smoothen out the top
Leave to set for about 10 minutes.
Then release from the dish and serve
