Dasheen black cake is a Caribbean twist on the classic holiday dessert. Made with grated dasheen, soaked fruits, warm spices, and browning, this cake is dense, moist, and full of flavor. A rooted, festive bake that celebrates the flavors of Tobago and our love for ground provisions

Ingredients
  

  • 1/2 pound margarine
  • 8 ounces brown sugar
  • pounds grated dasheen 3½ lbs fresh dasheen
  • 3 pounds fruits raisins, prunes, cherries and currants combined soaked in rum & wine
  • Browning As needed. I prefer Grace brand in the small bottle
  • 6 eggs
  • 1 teaspoon mixed essence
  • 1 teaspoon bitters
  • 1/4 teaspoon nutmeg
  • 1 teaspoon spice powder
  • 1/2 pound plain flour
  • 3 teaspoon baking powder
  • Butter for greasing
  • Equal parts mixture of rum and wine for soaking cake.
Quick Fruit Mix
  • 1 pound currants
  • 1 pound raisins
  • ½ pound prunes
  • ½ pound mixed peel
  • ½ cup cherry brandy
  • ½ cup rum

Quick Fix Fruits
  1. Add everything to blender.
  2. Blend to the consistency you want.
  3. Add more rum if needed.
To make cake
  1. Set oven tot 350 degrees.
  2. Cream together butter and sugar until combined (about 10 minutes)
  3. Grate dasheen and add grated dasheen to mixture.
  4. Add fruits to mixture, then browning to get your desired color.
  5. In another bowl, combine eggs, essence, bitters, spices and nutmeg.
  6. Combine egg mixture with butter mixture.
  7. Add flour and baking powder and combine well.
  8. Grease pan and add mixture.
  9. Bake for 45 mins to 1 hour. (Cake will leave side of pan)
  10. Pour rum glaze over cake coating well till cooled.

Notes

Pans: I used 2 8-inch pans. One had a height of 3 inches, another 1 inch. It's best to use 1 inch pans. You should get 3 -4 with this batter.
Dasheen: A food processor gave a better texture than using a box grater for this cake.
