Easy Cornmeal Porridge

A delicious Caribbean breakfast staple made from cornmeal, porridge is a combination of cornmeal boiled in milk and spices. A flavorful and filling breakfast option.

Ingredients
  

  • 1 cup cornmeal
  • 5 cups water
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 4 bay leaves
  • 1 teaspoon salt
  • 1/2 cup milk
  • 1/2 cup condensed milk

Method
 

  1. Add 1 cup water to cornmeal in a bowl. Mix together and crush any lumps.
  2. Add 4 cups of water to boil
  3. Add cinnamon, nutmeg, bay leaf and salt
  4. Add cornmeal mix and lower stove to simmer
  5. Mix well, removing lumps
  6. Add milk and condensed milk
  7. Simmer till warmed through
  8. Serve
