Stew saltfish (or simply Salt Fish) is a Caribbean favorite where it's accompanied by rice or ground provision. The main ingredients are salt fish or salt cod, onions, tomatoes, garlic, pepper, thyme, scotch bonnet peppers, and seasoning

Ingredients
  

  • 12 ounces saltfish salted cod, bacalao
  • 2 tablespoons vegetable oil
  • 3 pimento peppers chopped
  • 4 cloves garlic crushed
  • 4 blades chadon beni chopped
  • 1 large onion chopped thinly
  • 1 large beef tomato cubed
  • 1 stalk celery chopped (about 1/4 cup)
  • 1 bell pepper chopped
  • 2 scallions chopped
  • 1 tablespoon fresh thyme flakes or leaves from 4 thyme sprigs
  • 1 hot pepper chopped
  • ¼ teaspoon black pepper
  • Salt optional

Method
 

Desalt and rehydrate the saltfish
  1. Place the saltfish in a bowl and add enough room-temperature water to cover it.
  2. Soak for about 15 minutes, then drain and discard the water.
  3. Taste a small piece to check the salt level.
  4. If it's still too salty, cover with fresh water and soak again. Repeat as needed until the salt level is to your liking.
  5. Drain well, then shred or chop the saltfish into bite-sized pieces.
How to make stewed saltfish
  1. While the saltfish is soaking, chop the vegetables, peppers, and herbs.
  2. Heat the vegetable oil in a medium pot over medium heat.
  3. Add the pimento peppers, garlic, onion, celery, bell pepper, scallions, thyme, and hot pepper.
  4. Sauté for about 5 minutes, until the onion has softened.
  5. Drain the saltfish well and add it to the pot. Stir to combine with the vegetables and cook for about 5 minutes.
  6. Add the tomatoes, chadon beni, and black pepper. Stir to combine.
  7. Cook for another 5 minutes, until the tomatoes have softened and the flavors have come together.
  8. Taste and adjust the black pepper and salt, if needed.
  9. Remove from the heat and serve with your choice of bake, dumplings, rice, or ground provision.
