This Caribbean fry bake recipe makes light, fluffy fried bread with a crisp exterior and soft inside. Perfect for bake and saltfish, smoked herring, cheese, or fried shark.

Ingredients
  

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 2 teaspoons butter optional
  • ¾ to 1 cup water
  • Oil for frying

Method
 

  1. In a mixing bowl, combine the flour, baking powder, and salt.
  2. If using butter, rub it into the flour mixture until lightly crumbly.
  3. Gradually add water and mix to form a soft dough.
  4. Knead lightly until smooth, then cover and let rest for 10 minutes.
  5. Divide the dough into equal portions and flatten slightly.
  6. Heat oil in a deep pan over medium heat.
  7. Fry the bakes in hot oil until puffed and golden brown on both sides, turning as needed.
  8. If making a larger batch, fry in batches to avoid overcrowding the pan.
  9. Remove and drain on paper towels before serving.

Notes

Butter is optional, but adding a small amount helps give the fry bake a light crunch on the outside.
This recipe doubles easily. Fry in batches to keep the oil temperature steady.
Fry bake is best enjoyed fresh.
