Green fig (Green Banana) salad

Ingredients
  

  • 4 - 6 green figs Green bananas
  • 1 medium onion finely chopped. Try a mini food processor
  • 3/4 can of mixed vegetables
  • 1/2 red bell pepper
  • 1/2 orange bell pepper
  • 1/2 stick celery chopped finely
  • 6 threads chive chopped finely
  • 1/2 cup sweet corn kernel
  • 2 pimento peppers chopped (optional)
  • 1 hard-boiled egg optional, chopped
  • 1/2 - 3/4 cup mayonnaise
  • 1 teaspoon sugar
  • Salt to taste
  • Black pepper to taste

Method
 

  1. In a large deep pot, bring water to boil with added salt. Make sure there is enough water to cover the bananas in the pot.
  2. Cut off the ends of the bananas and pull the knife down the length of the banana
  3. To the boiling water, add 2 - 3 tablespoons of oil.
  4. Add the bananas to the water and let boil till tender. Took me about 20 minutes.
  5. While the bananas are boiling, combine some mayonnaise, along with the onions, garlic, and celery in a large bowl.
  6. Add in the sugar and combine well.
  7. Add the remaining ingredients excluding the egg.
  8. Once the bananas are tender, drain from the water. When cooled to the touch, peel and cut them into bite-sized pieces.
  9. Add them to the mayonnaise mix and combine.
  10. Add more mayonnaise if you prefer, along with salt, black pepper, and all-purpose seasoning.
  11. Add the chopped egg and fold in gently.
  12. Add chives and green onions.
  13. Cover and set aside in he fridge so that the flavors can blend.
