Ingredients
  

  • 1 pound green fig 3 - 4
  • Water for boiling and to make the souse
  • 3 cloves garlic finely chopped
  • 1/4 cup finely sliced onion
  • 3 tablespoons lime juice
  • 1 medium cucumber thinly sliced.
  • 3 blades chadon beni leaves chopped (or a tablespoon chadon beni sauce)
  • 1 scotch bonnet pepper seed removed and finely chopped
  • Salt to taste

Method
 

  1. Remove both ends of the figs and give them a good wash to remove any dirt.
  2. Bring a large pot filled with water and a tablespoon of salt to a boil.
  3. Add the figs, and boil until tender. (about 25 minutes).
  4. Once fork tender, remove from water and allow to cool.
  5. Once cooled, peel and slice. You can slice into 1” rounds or diagonal slices.
  6. Place the slices in a large bowl and cover with water in a bowl.
  7. Add the remaining ingredients of the peppers, cucumber, onions, and garlic.
  8. Add lime juice and taste for salt and black pepper
  9. Let sit for at least 10 - 15 minutes for flavors to blend well.
