Irish moss (sea moss) recipe

A creamy and spiced Caribbean sea moss drink made with homemade sea moss gel, milk, warming spices, and a hint of bitters. This nourishing punch is packed with nutrients and flavor, making it a deliciously comforting drink you can enjoy chilled or over ice.

Ingredients
  

  • 1 pack of sea moss gel 85 grams or 3/4 cup
  • 1 tin evaporated milk 14 oz
  • 1 cup whole milk
  • 1/2 - 3/4 cup sweetened condensed milk
  • 1/4 teaspoon nutmeg
  • 1/4 tsp cinnamon
  • 1 tsp mixed essence
  • 3 - 4 dashes Angostura aromatic bitters
  • Water
  • Lime juice 1/2 lime

Method
 

Making sea moss gel
  1. Wash sea moss under running water, making sure to take out any debris you might find.
  2. Take the washed moss place it into a bowl and cover with water about an inch more. Squirt the lime juice into the water. Let that sit and soak for at least one hour or even overnight.
  3. Rinse the sea moss out, and discard that original water.
  4. In a pot, cover the sea moss with water and bring to a boil on medium heat.
  5. Boil until the moss has turned into jelly. Dissolved into the water.
  6. Remove from the heat and let it cool. It will continue to thicken.
  7. Store as needed.
Making sea moss drink
  1. Take 1 1/4 cups of sea moss gel and place it into a high-powered blender
  2. Add milk, condensed milk, evaporated milk, bitters, essence, and blend till combined.
  3. Taste for sweetness and adjust
  4. Strain if desired.
  5. Serve over ice or chill and serve.
