Jamaican Hard Dough Bread

A slightly sweet, sturdy loaf bread that’s perfect for sandwiches. This Jamaican hard dough bread is a soft on the inside, firm outside, and easy to freeze for later.

Ingredients
  

  • 1 pound all-purpose flour
  • 3 tablespoons unsalted butter cut into small pieces
  • 1 teaspoon sugar
  • 2 teaspoons instant yeast I use SAF Instant
  • 1 cup water room temperature
  • 1 teaspoon salt
  • 1 egg white for brushing

Method
 

  1. Preheat oven to 350°F (175°C).
  2. Mix dry ingredients: In a large bowl, combine flour, yeast, sugar, and salt.
  3. Incorporate butter: Rub butter into the flour using your fingers or a pastry blender until fully mixed.
  4. Add water gradually and knead dough until smooth and elastic, about 10 minutes.
  5. First rise: Place dough in a greased bowl, cover with a damp towel, and let rise for 45 minutes.
  6. Punch down the dough and transfer to a lightly floured surface.
  7. Roll out into a rectangle, then tightly roll into a log. Tuck the ends under if needed to fit your loaf pan.
  8. Second rise: Place rolled dough in a greased bread pan and let rise for 30 minutes.
  9. Brush the top with beaten egg white.
  10. Bake for 30–40 minutes or until golden brown. Let cool before slicing.
