Jamaican jerk chicken wings - Oven, Air fryer & Grill

A traditional twist on simple baked Jamaican jerk chicken wings with a spicy jerk seasoning and jerk sauce. A perfect chicken wing dish option.

Ingredients
  

For chicken
  • 2 pounds chicken wings flats and drums
  • 3 tablespoons jerk marinade
  • 1 tablespoon olive oil
For jerk sauce
  • 1/2 cup chicken broth
  • 3/4 cup BBQ sauce jerk BBQ sauce
  • 3/4 cup liquid from baked chicken
  • 2 fresh thyme leaves
  • 1/4 teaspoon ginger powder
  • cornstarch or flour

Method
 

Preparing chicken
  1. Wash and clean chicken wings of any debris, extra skin, and feathers. Separate flats from drums and discard tips.
  2. Leave to soak covered with water with lime juice and about a tablespoon of pepper sauce. Let that sit for at least 30 minutes.
  3. Rinse water off the chicken, and pat dry.
  4. In a large bowl, add the chicken wings, olive oil, and jerk marinade.
  5. Massage well into chicken cover with plastic wrap and leave for at least 4 hours or overnight.
  6. Preheat oven to 400 degrees
  7. Remove the chicken from the bowl and place it into the baking dish. Ensure that you have them in a single layer.
  8. Bake for 35 minutes, until chicken is mostly cooked through.
  9. Remove from oven, take liquid from bake, and make the sauce as instructed below.
  10. Add chicken back to the oven for another 5 minutes.
  11. Then cover the chicken with the sauce created and bake for another 5 minutes.
  12. Then adjust to broil for another 5 minutes.
For jerk sauce for chicken
  1. Take the liquid from baked chicken (I got about 3/4 cup)
  2. Add it to a pot with the other ingredients (except cornstarch) and simmer on medium heat until thickened.
  3. As it starts to thicken, add a mix of 1 tablespoon cornstarch and 1 tablespoon water and continue to simmer for another 5 minutes

Notes

Grilled: Set your grill to 350 degrees. Place the chicken wings on your grill and grill till one side gets darkened then flip to the other side and darken. After about 15 - 18 minutes your wings should be cooked. Checked the temperature for 165 degrees.
Air fryer: Preheat the fryer to 400 degrees if needed. Place wings in the air fryer in a single layer and fry for 10-15 minutes turning every 5 minutes until completed. Time can vary slightly based on the size of the wings.
For both, you would need to create the sauce if needed. Omit the liquid that we would collect from the wings in the oven but make everything else as instructed. Then coat the wings in the sauce once thickened or used as a dipping sauce.
Notes:
If you don't have any foil to cover, that is okay. Just bake until tender and the internal temp is 165 degrees.
