Jerk chicken pizza

A bold Caribbean jerk chicken pizza with spicy chicken and packed with veggies. A quick recipe using premade dough for the perfect weeknight treat.

Ingredients
  

  • 1 pound skinless and boneless chicken thighs
  • 2 tablespoons jerk seasoning
  • 1/2 cup jerk BBQ sauce
  • For pizza
  • 1 ball premade pizza dough
  • 2 tablespoons pesto spread
  • red onions
  • green bell pepper
  • scallion
  • pineapple chunks
  • tomatoes
  • banana peppers
  • 1 cup shredded cheese

Method
 

For chicken
  1. Clean your chicken then season with the jerk seasoning.
  2. Let the chicken sit for at least one hour and even better overnight in the fridge.
  3. Set your oven to 350 degrees and line a baking sheet.
  4. Place the chicken on the sheet and bake for 35 - 40 minutes until it's cooked through (165 degrees internal temperature)
  5. Remove from the oven and let it sit for about 5 minutes.
  6. Chop the chicken up into small pieces, then add the BBQ sauce and mix well.
For pizza
  1. Set oven to temperature suggested by premade dough (If house-made from the store, the temperature is usually 400 degrees).
  2. Lay the dough out on a tray/pizza stone. If required to pre-bake then do so now).
  3. Spread the pesto out on the dough.
  4. Add onions, banana peppers, bell peppers, tomatoes and pineapples.
  5. Then add chicken pieces and finally layer with cheese.
  6. Place to bake in the oven for 18-20 minutes until the cheese is melted and the crust is golden brown.
  7. Slice and serve hot.
