How to make butter bean soup

Spicy Butter Bean Soup

This delicious creamy soup is packed with layers of flavor and does not include dairy. A perfect winter night soup with an optional Caribbean twist of jerk shrimp.

Ingredients
  

  • 1 can goya butter beans
  • 1/2 cup chopped onion
  • 2 cloves garlic chopped
  • 2 tablespoons olive oil
  • 3 cups vegetable stock
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme leaves
  • Salt and pepper to taste
  • 6 sun-dried tomatoes chopped
  • 1/2 teaspoon chili flakes

Method
 

  1. In a large pot heat olive oil over medium heat
  2. Add onions and garlic and saute till onions opaque
  3. Add chili flakes and tomatoes and saute
  4. Add butter beans and saute for 2 minutes
  5. Add stock, garlic powder, thyme leaves and cook for five minutes
  6. Place liquid in a blender and blend in short bursts until smooth. BE CAREFUL. IF using a blender place a towel over the top for safety. An immersion blender can also be used
  7. Return soup to stove and simmer on low for 5 minutes
  8. Add salt and pepper as needed
  9. Serve
