Tilapia in Foil

Baked tilapia in foil is an easy, flavorful meal option. Fillets of tilapia are layered with vegetables and herbs, wrapped in foil, and baked to perfection.

Ingredients
  

  • 4 tilapia fillets
  • 4 tablespoons green seasoning or use salt and black pepper to taste
  • ½ cup corn
  • ½ cup okra sliced
  • ½ cup carrots sliced
  • 4 baby potatoes thinly sliced
  • 4 sprigs thyme
  • 8 sprigs chive chopped
  • ¼ cup parsley chopped
  • Butter for each packet

Method
 

  1. Preheat the oven to 350°F (175°C).
  2. Place a sheet of foil on a flat surface and spread 1 tablespoon of butter in the center.
  3. Place one tilapia fillet on the buttered area.
  4. Top with a portion of the corn, potatoes, okra, carrots, thyme, chives, and parsley (divide evenly across 4 packets).
  5. Fold the long sides of the foil over the fish, roll down to seal, then roll in the short sides to close the packet completely.
  6. Place the foil packet on a baking tray. Repeat for the remaining fillets.
  7. Bake in the oven for 25 minutes.
  8. Serve hot, directly from the foil or plated.
