Trini Beef Soup

Ingredients
  

For the soup
  • 1 lb beef fresh, preferably bone-in
  • 2 tablespoons green seasoning
  • 3 cloves garlic crushed
  • 1 cup carrots cubed
  • 1 cup pumpkin cubed
  • 1 cup potatoes cubed
  • 7 cups of water more as needed
  • ½ cup chopped onions
  • 1 beef bouillon cube
  • 2 pimentos chopped
  • ½ cup green onions chives
  • ½ teaspoon black pepper
  • 1/4 teaspoon pepper sauce
  • 1 tablespoon cooking butter
  • Salt to taste
For the dumplings
  • 1 cup flour
  • 1 cup water
  • Pinch of salt

Method
 

  1. Mix the dumpling ingredients to form a dough and set aside.
  2. In a strong pot or pressure cooker, add cleaned and seasoned beef with green seasoning, garlic, and 4 cups of water. Cook until the beef is tender.
  3. Add pumpkin, carrots, potatoes, onion, and pimentos. Cook for 15–20 minutes on medium heat.
  4. Stir in green onions, black pepper, bouillon cube, pepper, and butter.
  5. Drop dumplings into the soup. Add salt to taste.
  6. Simmer until dumplings float to the top. Taste and adjust the seasoning before serving.
