  • 3/4 cup water
For Filling
  • 3 medium potatoes.
  • 1 teaspoon curry powder.
  • 3 garlic cloves minced finely.
  • 1/2 a hot pepper chopped up with no seeds or membranes. (or use pepper sauce).
  • 1 teaspoon ground geera
  • 1 1/4 teaspoon salt Adjust as preferred
  • 1 teaspoon black pepper Adjust as needed
For Frying
  • Enough oil for deep frying

Method

Dough
  1. Mix flour, 1/2 tsp salt, baking powder, and water and lightly knead.
  2. Once mixed, cover the dough with a damp cloth and leave it to relax.
  3. Divide dough into balls (I got 7).
Filling
  1. Wash and peel the potatoes and put them in a pot of boiling water with salt.
  2. Boil until tender.
  3. Once tender, strain the potatoes.
  4. In a medium bowl, mash the potatoes and season with curry, geera, minced garlic, salt, and black pepper.
  5. Adjust taste as needed.
Frying
  1. Flatten each dough ball into about 4" circles. Roll it out as much as you can.
  2. Place about two spoons of potato mixture on half of the ball.
  3. Moisten the edges of the dough with water all around.
  4. Fold over the dough and seal well. You can also use a fork to make sure it's sealed properly.
  5. Flatten out the pie. You can use a rolling pin and lightly roll out.
  6. On medium-high heat, heat your oil for frying. I use my thermometer to make sure it gets to about 350 degrees.
  7. Place dough into the oil and fry till golden brown.
  8. Remove from oil and place on a napkin to drain off any excess oil.
