Trinidad baked potato pie

Ingredients
  

  • 2 pounds Idaho potatoes
  • 3 pimento peppers chopped finely
  • 4 cloves garlic chopped finely
  • 4 sprigs of fresh thyme leaves removed from stems
  • 1.5 - 2 cups whole milk
  • 6 tablespoons butter
  • 1/2 cup creamed corn
  • 2 cups grated sharp cheddar cheese
  • 1/4 teaspoon salt salt to taste
  • 1/4 teaspoon black pepper black pepper to taste

Method
 

  1. Wash and clean your potatoes
  2. In a large pot, add water and a pinch of salt, and bring the water to a boil.
  3. Add the cleaned potatoes and boil till tender.
  4. While the potatoes are boiling, melt the butter and add the chopped pimentos, garlic, and thyme. When the butter melts, remove from the heat.
  5. Once the potatoes are boiled, discard the water and set the potatoes aside to cool and handle.
  6. Peel the skin from the potatoes and chop them up.
  7. Preheat your oven to 350 degrees
  8. Add the chopped potatoes to a large bowl.
  9. To the bowl, add the butter mixture, salt, and pepper.
  10. Add half the milk to the bowl and start mashing the potatoes. Mash until you like the consistency.
  11. Add more of the milk (you might not need all), cream corn, and half the cheese, and continue to combine.
  12. Taste for salt and pepper.
  13. Add potato mixture to a greased dish (I used an 8X8 dish)
  14. Flatten evenly and cover with the remaining cheese.
  15. Bake in the oven for 30 minutes, until the cheese is melted and a nice golden brown.
  16. Remove from oven and let cool for at least an hour.
