Ingredients
  

  • 3 ripe bananas
  • 1 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 cup granulated sugar
  • 1/4 teaspoon ground cinnamon
  • 1 teaspoon baking powder
  • 1/4 teaspoon vanilla extract
  • Oil for frying
  • Powdered sugar optional, for serving
  • Ground cinnamon optional, for serving

Method
 

  1. Peel the bananas and add them to a medium bowl. Mash until mostly smooth.
  2. In a separate bowl, combine the flour, sugar, salt, baking powder, and cinnamon.
  3. Add the dry ingredients to the mashed bananas and mix until well combined. The batter should be thick enough to scoop and hold its shape.
  4. Add the vanilla extract and mix until combined.
  5. Heat the oil in a deep pot over medium heat to about 360°F.
  6. Using a spoon or cookie scoop, carefully drop portions of the batter into the hot oil. Fry 5 to 6 fritters at a time for about 3 to 5 minutes, turning as needed, until golden brown and cooked through.
  7. Remove the fritters from the oil and place them on a paper towel-lined plate to drain. Repeat with the remaining batter.
  8. Sprinkle with powdered sugar and additional cinnamon, if desired. Serve hot.
