Trinidad Corn Pie

A delicious casserole combining sweet corn and savory bell peppers. Perfect side for those family gatherings.

Ingredients
  

  • 1 can cream styled corn
  • 1 can whole kernel corn drained
  • 3 eggs
  • 1 stick of butter
  • 1 box of jiffy corn muffin mix
  • 1/4 green bell pepper diced
  • 1/4 red bell pepper diced
  • 1/3 large onion diced

Method
 

  1. Heat oven to 350 degrees
  2. Heat a heavy saucepan over medium-high heat and add butter to melt
  3. When halfway melted, add bell peppers and onions. Cook until onions are opaque
  4. Add black pepper and set aside
  5. In a separate bowl beat eggs.
  6. Add jiffy mix and corns and combine
  7. Add vegetables and combine
  8. Add to lightly greased baking dish
  9. Bake for 1 and a half hours until knife, inserted into center of pie, comes out clean
