Trinidad Curry Shrimp

A flavorful Trinidad curry shrimp using curry powder and other Caribbean spices. Quick and easy and perfect to pair with some steamed white rice.

Ingredients
  

To Marinate Shrimp:
  • 2 pounds medium to large shrimp cleaned and deveined
  • 2 tablespoons green seasoning
  • 3 cloves garlic crushed
  • 2 tablespoons curry powder
  • 2 large Roma tomatoes chopped
  • 2 scallions chopped
  • ½ medium onion chopped
  • 1 celery stalk chopped
  • 3 chadon beni culantro leaves, chopped
  • 3 stalks fresh thyme
To Curry Shrimp:
  • 4 tablespoons oil
  • 4 tablespoons curry powder
  • 1 teaspoon geera ground roasted cumin
  • ½ teaspoon garam masala
  • ¼ teaspoon saffron turmeric
  • 1 scallion chopped
  • ½ medium onion chopped
  • 1 celery stalk chopped
  • ¼ cup chopped pimento peppers or 1 tablespoon Bertie’s pimento sauce
  • Water as needed
  • Salt and black pepper to taste
  • Pepper sauce or fresh hot pepper to taste

Method
 

To Season Shrimp:
  1. Wash shrimp, remove tails, and devein if needed.
  2. In a large bowl, combine the shrimp with green seasoning, garlic, curry powder, tomatoes, scallions, onion, celery, chadon beni, and thyme.
  3. Let marinate for at least 20 minutes.
To Curry Shrimp:
  1. Heat oil in a large pot over medium-high heat.
  2. Add onion, scallion, and garlic. Sauté until onions start to darken (not burn).
  3. Reduce to medium-low heat. Add curry powder, geera, masala, and turmeric. Cook until the curry mixture darkens and becomes grainy.
  4. Add the marinated shrimp mixture to the pot and stir to combine.
  5. Let the shrimp cook and release its own liquid, about 4 minutes. Add hot pepper or pepper sauce.
  6. Add a little water to create a gravy. Season with salt and black pepper to taste.
  7. Cook for an additional 3 minutes or until shrimp is fully cooked.
  8. Remove from heat and serve hot with steamed rice.
