Method
To Season Shrimp:
- Wash shrimp, remove tails, and devein if needed.
- In a large bowl, combine the shrimp with green seasoning, garlic, curry powder, tomatoes, scallions, onion, celery, chadon beni, and thyme.
- Let marinate for at least 20 minutes.
To Curry Shrimp:
- Heat oil in a large pot over medium-high heat.
- Add onion, scallion, and garlic. Sauté until onions start to darken (not burn).
- Reduce to medium-low heat. Add curry powder, geera, masala, and turmeric. Cook until the curry mixture darkens and becomes grainy.
- Add the marinated shrimp mixture to the pot and stir to combine.
- Let the shrimp cook and release its own liquid, about 4 minutes. Add hot pepper or pepper sauce.
- Add a little water to create a gravy. Season with salt and black pepper to taste.
- Cook for an additional 3 minutes or until shrimp is fully cooked.
- Remove from heat and serve hot with steamed rice.
