Trinidad Macaroni Pie Recipe

Trinidad macaroni pie is a cheesy baked pasta dish made with eggs, milk, and seasonings. It’s the Caribbean twist on classic mac and cheese.

Ingredients
  

  • 8 oz macaroni or elbows
  • 16 oz cheese blocks can be a mix of sharp cheddar and parmesan
  • 1/2 cup shredded cheese for the last layer
  • 2 eggs
  • 1 can evaporated milk 12 oz
  • 1 tablespoon mustard
  • 1.5 tablespoons dill
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Method
 

  1. Set oven to 350 degrees
  2. Grate cheese and set aside.
  3. Boil pasta according to package instructions till al dente and strain out of the pot
  4. In a large bowl add eggs and milk and beat together
  5. Add pasta back to pot on low heat
  6. Add milk mixture to pasta
  7. Add grated cheese and all other seasonings to pasta
  8. Mix till incorporated
  9. Pour pasta mixture into a greased dish
  10. Sprinkle with the remaining 1/2 cup cheese
  11. Bake for approximately 30 minutes. Until pie is firm and top is browned.
