Easy Pineapple Cucumber Juice (Juicer or Blender Friendly)

Growing up in Tobago, fresh homemade juice was just a normal part of life. Whatever fruit or vegetable was in season could end up in a jug. We would buy produce from roadside vendors and combine it with whatever we had growing at home.

So making juice from combinations like pineapple and cucumber doesn’t feel unusual to me. It’s simply using what you have, blending the flavors that work together, and ending up with something cold and refreshing in the fridge.

You only need three fresh ingredients to make this juice, plus sugar if you want it a little sweeter.

  • Pineapple – Use a ripe pineapple for the best flavor and natural sweetness. Remove the peel and core before juicing or blending.
  • Cucumber – Regular or English cucumber both work, so use whichever you have available. I peel mine when using a blender, but leave the skin on when using my juicer.
  • Ginger – Fresh ginger adds a little heat to the juice. I use up to about 2 inches, but you can use less if you prefer a milder ginger flavor.
  • Sugar – This is completely optional. Taste the juice first, then add sugar only if you think it needs it.

How to make pineapple cucumber juice

You can make pineapple cucumber juice with either a blender or juicer. I use slightly different prep depending on which one I’m using.

Using a blender

  1. Prep the ingredients. Peel and core the pineapple, then cut the flesh into chunks. Peel the cucumber and cut it into chunks. Peel the ginger.
  2. Blend. Add the pineapple, cucumber, and ginger to the blender with a little water. Blend until smooth, adding more water as needed to help everything blend.
  3. Strain the juice. Pour the mixture through a fine-mesh strainer into a pitcher, pressing the pulp to extract as much juice as possible.
  4. Taste and adjust. Taste the juice and add sugar if your pineapple isn’t sweet enough.
  5. Chill and serve. Serve over ice or refrigerate until cold.

Using a juicer

  1. Prep the ingredients. Peel and core the pineapple and cut it into pieces that will fit your juicer. Trim the cucumber and cut as needed. I don’t bother peeling the cucumber when I’m using my juicer. Peel the ginger.
  2. Juice. Run the pineapple, cucumber, and ginger through the juicer.
  3. Taste. Add sugar if needed and stir until dissolved.
  4. Serve. Pour over ice or chill in the refrigerator before serving.

Ways to change it up

The pineapple, cucumber, and ginger are a simple combination on their own, but you can easily adjust the juice to suit your taste.

  • Skip the ginger if you want the pineapple and cucumber flavors to stand out more.
  • Add lime juice for a little extra tartness.
  • Add fresh mint for another fresh, cooling flavor.
  • Use coconut water instead of plain water when making the blender version.
  • Use frozen pineapple in the blender for a colder, slightly thicker drink.
  • Add sparkling water to the finished juice just before serving for a little fizz.

Serving suggestions

Pineapple cucumber juice is best served cold or over plenty of ice. For a simple garnish, add a pineapple wedge, cucumber ribbon, or a sprig of fresh mint.

For a little fizz, top your glass with sparkling water just before serving. And if you’re making drinks for a lime, you can add a splash of dark rum to turn it into an easy cocktail.

It works well for brunch, picnics, cookouts, or simply keeping a cold pitcher in the fridge for a hot day.

How to store pineapple cucumber juice

Store leftover pineapple cucumber juice in a covered pitcher or airtight container in the refrigerator for 2 to 3 days.

The juice will naturally separate as it sits, so give it a good stir or shake before serving. For the freshest flavor, I prefer to drink it as soon as possible after making it.
