In a large bowl, sift together the cassava flour, sugar, baking powder, and salt.
In a separate bowl, whisk together the milk and beaten egg.
Pour the wet mixture into the dry ingredients and stir until just combined and smooth. Do not overmix.
Heat a nonstick pan or skillet over medium heat and lightly grease if needed.
Pour ¼ cup of batter onto the hot surface. When bubbles form and start to pop, flip and cook the other side until golden.
Repeat with the remaining batter. Serve warm with your favorite toppings.
