Ground Provision Pie

Ingredients
  

  • 1 lb cassava yucca (frozen Goya yucca works well)
  • 1 lb sweet potatoes
  • 1 tablespoon vegetable oil
  • 1 small onion finely chopped
  • 2 teaspoons minced garlic
  • 1 teaspoon paprika
  • 1/2 teaspoon oregano
  • 1 can 12 oz crushed tomatoes
  • 2 tablespoons butter
  • 1/3 cup milk
  • 3 cups grated cheese

Method
 

  1. Preheat oven to 350°F (175°C).
  2. Heat oil in a pan and sauté garlic and onion until fragrant.
  3. Stir in crushed tomatoes, paprika, and oregano. Simmer for 8 minutes, then remove from heat.
  4. Boil cassava until fork-tender. Remove the fibrous core.
  5. Mash cassava with butter and milk until smooth. Add more milk or butter as needed.
  6. Boil sweet potatoes until tender. Drain and mash until smooth.
  7. In a greased baking dish, layer in this order: mashed cassava, mashed sweet potatoes, then the tomato sauce.
  8. Top with grated cheese.
  9. Bake for 40 minutes until bubbly and golden.
  10. Remove from oven, cool slightly, and serve.
