Pineapple and Cucumber Juice

A naturally sweet, refreshing drink made with just a few simple ingredients. Juicer or blender-friendly, it’s the perfect tropical cooler for hot days.

Ingredients
  

  • 1 pineapple
  • 1 cucumber
  • 1 knob of ginger
  • Sugar to sweeten optional

Method
 

  1. Cut off the top and bottom of the pineapple, peel, and slice off the flesh around the core. Discard the core.
  2. Trim the ends of the cucumber, peel, and cut into chunks.
  3. Run the pineapple, cucumber, and ginger through a juicer.
  4. Taste and sweeten with sugar if desired.
  5. Serve chilled or over ice.

Notes

No juicer? You can use a blender:
Chop the pineapple, cucumber, and ginger into smaller pieces.
Add to blender with coconut water (start with just enough to cover the bottom—about 1/4 of the way up).
Blend until smooth. Add more coconut water to adjust the consistency if needed.
Strain through a fine sieve or cheesecloth before serving.
