Method
- Cut off the top and bottom of the pineapple, peel, and slice off the flesh around the core. Discard the core.
- Trim the ends of the cucumber, peel, and cut into chunks.
- Run the pineapple, cucumber, and ginger through a juicer.
- Taste and sweeten with sugar if desired.
- Serve chilled or over ice.
Notes
No juicer? You can use a blender:
Chop the pineapple, cucumber, and ginger into smaller pieces.
Add to blender with coconut water (start with just enough to cover the bottom—about 1/4 of the way up).
Blend until smooth. Add more coconut water to adjust the consistency if needed.
Strain through a fine sieve or cheesecloth before serving.
