Caribbean Irish moss (sea moss) drink recipe
Caribbean Irish moss drink is a creamy, spiced beverage made with sea moss gel, milk, sweetened condensed milk, and warm spices. While it’s commonly called Irish moss in Jamaica, in Trinidad and Tobago we usually just call it sea moss. No matter the name, it’s a refreshing Caribbean drink that’s enjoyed for its rich flavor, smooth texture, and long-standing place in Caribbean kitchens.

Growing up, we always called it sea moss. If someone mentioned Irish moss, I’d know exactly what they meant, but sea moss is the name you’ll hear most often in Trinidad and Tobago.
Whether you’re making it for the first time or bringing back a taste of home, this recipe will show you how to make a smooth, creamy Caribbean Irish moss drink from scratch.
What is Irish Moss?
Irish moss, often called sea moss in Trinidad and Tobago, is an edible sea algae that’s used throughout the Caribbean to make drinks, desserts, and other recipes. Once soaked and cooked, it forms a thick gel that gives Irish moss drink its signature creamy texture.
Although the names are often used interchangeably, you’ll usually hear Irish moss in Jamaica, while sea moss is the more common name in Trinidad and Tobago. No matter what you call it, the prepared gel is blended with milk, spices, and sweetened condensed milk to make this creamy Caribbean drink. Some people will also add in ingredients like oats, peanut butter, or Guinness to make it even richer
You can buy dried Irish moss from Caribbean grocery stores or online. Look for clean, dried pieces that are free of excess sand or debris before soaking and preparing them.
Why People Like to Drink Irish Moss
Irish moss has been enjoyed throughout the Caribbean for generations, and everyone has their own reason for reaching for a glass. Some love its creamy, smooth texture and lightly spiced flavor, while others grew up drinking it at family gatherings or as an everyday homemade drink.
It’s also a natural source of minerals such as iodine and potassium, which is one reason many people choose to include it in their diet. Rather than focusing on any one benefit, Irish moss has earned its place in Caribbean kitchens through tradition, taste, and versatility.
Every island has its own spin on the recipe. Some versions include oats for a heartier drink, peanut butter for extra richness, or even a splash of Guinness for a more traditional twist. No matter how it’s made, Irish moss remains one of the Caribbean’s most recognizable homemade drinks.
How to Make Irish Moss Drink
Ingredients You’ll Need
Here are some quick notations for some of the base ingredients. See the full list of ingredients and quantities in the recipe card below.
Core Ingredient
- Sea moss gel: This is the star. Use pre-made gel or make your own using dried sea moss.
Creamy Base
- Evaporated milk and whole milk: These give the drink its richness. You can use semi-skimmed or plant-based alternatives.
- Sweetened condensed milk: Adds sweetness and creaminess.
Flavorings
- Nutmeg and cinnamon: Warm spices that round out the flavor.
- Mixed essence: A Caribbean baking essential that adds a unique depth with vanilla, almond, and citrus notes.
- Angostura aromatic bitters: A few dashes add subtle spice and bitterness. Orange bitters work too.
- Lime juice: Helps to neutralize any ocean flavor from the moss.
Common Mistakes to Avoid When Making Irish Moss Drink
Making an Irish moss drink is simple, but a few small mistakes can affect the flavor and texture. Here are a few things to watch out for:
- Not rinsing the dried sea moss well: Dried sea moss can contain sand, salt, or other bits of debris. Rinse it thoroughly before soaking and again before cooking to help ensure a clean, fresh-tasting drink.
- Not soaking it long enough: Soaking the sea moss softens it and helps it cook evenly. For the best texture, let it soak for at least 8 hours or overnight before boiling.
- Using too much sea moss gel: A little sea moss gel goes a long way. Adding too much can make the drink overly thick or gummy. If this happens, simply blend in a little more milk until you reach your preferred consistency.
- Not blending long enough: Blend until the drink is completely smooth and creamy. A high-powered blender works best, especially if your sea moss gel has become very firm after chilling.
- Serving it before it’s chilled: Irish moss drink is best served cold. Refrigerating it for a few hours allows the flavors to come together and gives the drink its signature refreshing taste.
Instructions
- Rinse dried sea moss under running water to remove any sand or debris.
- Place it in a bowl with water and a squirt of lime juice. Let it soak for at least 8 hours or overnight.
Recipe Tip: Traditionally, raw sea moss was often gathered fresh from the sea, so soaking it with a little lime juice helped freshen it before cooking. While most dried sea moss sold today has already been cleaned and processed, I still include this step because it’s how I learned to prepare it.
- Drain and rinse again.
- Add to a pot with fresh water. Bring to a boil over medium heat and cook until the moss softens into a jelly-like consistency.
- Let cool. Store in the fridge in a sealed container. It will thicken more as it cools.
Preparing your sea moss gel
- Add 1¼ cups sea moss gel to a high-powered blender.
- Add evaporated milk, whole milk, sweetened condensed milk, nutmeg, cinnamon, mixed essence, and bitters.
- Blend until smooth and creamy.
- Taste and adjust sweetness or thickness (add more milk to thin).
- Strain if desired and serve chilled or over ice.
Customize your Irish Moss Drink
Every family seems to have their own way of making Irish moss. Here are a few popular additions you can try to make it your own:
- Make it dairy-free: Replace the evaporated milk, whole milk, and sweetened condensed milk with your favorite vegan alternatives, such as almond milk or coconut milk. Sweeten to taste with your preferred sweetener.
- Blend in oats: Oats make the drink thicker and more filling while adding a mild, creamy flavor.
- Add a banana: A ripe banana adds extra creaminess and natural sweetness to the drink.
- Mix in peanut butter: It creates a richer drink with a delicious, nutty flavor, similar to a Caribbean peanut punch.
- Try Guinness: A splash of Guinness is a traditional addition in some Caribbean households for an even richer drink.

How to store your Irish Moss Drink
Store leftover Irish moss drink in an airtight container in the refrigerator for up to 2 weeks. Give it a good shake or stir before serving, as natural separation may occur during storage.
If you’ve made extra sea moss gel, keep it in a sealed container in the refrigerator for 2 to 3 weeks, or freeze it in ice cube trays for longer storage. Frozen cubes can be thawed as needed for future batches.
