While many people outside the Caribbean may think of aloo pies when they hear “Trini potato,” this version is completely different. Instead of a fried dough pocket snack, Trinidad potato pie is baked in a casserole dish and sliced into hearty squares.

This baked potato pie recipe combines potatoes, herbs, pimento peppers, creamed corn, butter, and cheese for a rich and flavorful dish that’s simple to make and always a crowd favorite.

How to make Trinidad Potato Pie

Ingredients note

The ingredients needed to make potato pie distrbuted.
  • Potatoes – Russet potatoes, or even Idaho, work best for this dish because they mash easily and hold up well after baking. Try medium-sized ones.
  • Milk – Whole milk gives the pie a richer texture and helps keep the filling creamy.
  • Butter: Helps carry the flavor of the herbs and seasonings throughout the pie. Garlic butter also works well here.
  • Thyme: Using fresh ingredients is best for this recipe. Remove the leaves from the stalks.
  • Cloves garlic – Fresh garlic gives the best flavor, but minced garlic works too. If using jarred garlic, avoid adding too much of the liquid.
  • Cheese – Sharp cheddar gives the best flavor and melts beautifully into the potatoes. Freshly grated cheese works better than pre-shredded cheese, which doesn’t melt as smoothly.
  • Pimento pepper – a popular flavoring pepper in Trinidad and Tobago adds great flavor to dishes without the heat.
  • Creamed corn – Adds extra flavor, moisture, and helps hold the pie together.

Make sure to see the recipe card for the full list of ingredients and the measurements.

Tips for the Best Potato Pie

Here are a few notes on getting the pie to your liking.

  • For a smoother pie, mash the potatoes completely before baking.
  • If you prefer more texture, leave a few chunks of potato throughout the mixture.
  • Let the pie cool before slicing so it firms up properly.
  • Add extra cheese on top for an even cheesier crust.

Variations and Additions

Though this is a simple pie, there are a few things you can add to make it more of your own. Here are a few suggestions.

  • Whole kernel corn for extra texture
  • Mushrooms – Cream of mushroom soup for a richer, creamier pie
  • Green peas and carrots – for added vegetables. You can use canned or frozen packets.
  • Sweet peppers – Instead of pimento peppers
  • Small onion – Chop up onions finely and add them to the butter mixture as additional flavor.

Can I add a White sauce?

Yes. Some people like adding a simple white sauce to make Trinidad potato pie even creamier and richer.

To make a quick white sauce, melt butter over low heat, whisk in flour, then slowly add milk while stirring until smooth and thickened. You can then mix it into the potatoes before baking.

Storage & Reheating

Once the pie is cooled well, you can now cut it to serve.

Any leftovers can be stored in an airtight container in the refrigerator for up to three days. You can reheat it in the oven. Heat the oven to 350 degrees, then place it in the oven until warmed through. You can also warm up in the microwave.

I do not find that this freezes well, so it’s not something I suggest.

What to Serve With Trinidad Potato Pie

Trinidad potato pie pairs well with stewed chicken, curry beef, callaloo, lentils, fresh salad, or fried fish.

This baked dish is one of those side dishes that fit into almost any Caribbean lunch spread.
