Air Fryer Whole Fish Recipe: Bold Caribbean Flavors Made Simple
This air fryer whole fish is an easy way to make Caribbean-style roast fish without firing up the grill. I use a whole snapper, season it simply with salt and plenty of black pepper, then stuff it with okra, corn, carrots, and thyme before wrapping it in foil with butter.

Cooking the fish in foil helps keep it moist while the vegetables and herbs cook right alongside it. For an approximately 8-ounce snapper, I air fry it at 370°F for about 30 to 35 minutes, until the flesh is cooked through and flakes easily.
If you love traditional Caribbean roast fish but want an easy indoor option, this is a simple way to get those familiar flavors using your air fryer.
Why cook whole fish in an air fryer
Cooking a whole fish in the air fryer is an easy option when you want roast fish without having to fire up the grill. Wrapping the fish in foil helps trap moisture while the butter, thyme, and vegetables cook together and flavor the fish.
For this recipe, I’m using the air fryer as an alternative to my traditional roast fish method. You won’t get the same smoky flavor or texture you would from roasting fish over coals, but you still get tender, flavorful fish with much less fuss.
Choosing the perfect fish
For this recipe, I use a whole snapper that has been cleaned and scaled. The fish I used was approximately 8 ounces, so keep in mind that a larger fish may need more time in the air fryer.
Most importantly, choose a fish that fits comfortably in your air fryer basket or tray. When buying fresh fish, look for clear eyes, shiny skin, firm flesh, and a fresh smell.

Ingredients and Their Role
What I love about the filling for this recipe is how easy it is to adjust. The amounts are a good starting point, but you can use a little more or less depending on the size of your fish and what you have on hand.

- Whole Fish (Snapper): The star of this recipe! Snapper’s firm texture and mild flavor make it ideal for stuffing and air frying. Alternative: If snapper isn’t available, try branzino or another similarly sized whole fish that fits your air fryer.
- Lime: Soaking the fish in lime juice is a traditional Caribbean method to reduce any fishy odor and add a subtle citrus flavor. Alternative: Lemon juice can be used for soaking.
- Okra: Adds texture and works well with the corn and carrots in the stuffing. Alternative: Zucchini or christophene can be used if you’re not a fan of okra.
- Sweet Corn: The natural sweetness of corn complements the savory herbs and spices in the stuffing. Alternative: Diced bell peppers or peas can offer a similar touch of sweetness.
- Thyme: A staple in Caribbean cooking, thyme infuses the fish with an earthy, aromatic depth.
- Salt and Black Pepper: The classic duo for seasoning. In this recipe, a heavier hand with black pepper brings bold, slightly spicy notes.
- Carrots: Cubed carrots add crunch and a mild sweetness to the stuffing.
- Butter: A small touch of butter keeps the fish moist and helps the seasoning stick. Alternative: Olive oil or coconut oil can be used as a dairy-free option.
- Dasheen Bush (Optional): Adds another Caribbean ingredient to the vegetable filling. Alternative: Spinach can be used if dasheen bush isn’t available.
Instructions
1. Prepare the Fish
Soak the whole snapper in the juice of one lime for 30 minutes. Rinse the fish, pat it dry with paper towels, then cut three slits into each side so the seasoning can get into the flesh.
2. Season Generously
Mix the salt and black pepper, then season both sides of the fish and inside the cavity, making sure to get some of the seasoning into the slits.

3. Prepare the Filling
In a bowl, mix the sweet corn, thyme, chopped okra, and cubed carrots. If you’re using dasheen bush, add it to the filling as well.

4. Stuff and Butter the Fish
Spread some of the butter over the seasoned fish. Stuff the cavity with the vegetable filling, then place any remaining filling on top of the fish. Add a few dollops of the remaining butter over the filling.

5. Cook in the Air Fryer
Place the stuffed fish on a piece of foil large enough to wrap it completely, then close the foil around the fish.

Place the wrapped fish in the air fryer and cook at 370°F for 30 to 35 minutes, or until the flesh is opaque and flakes easily with a fork. Cooking time can vary depending on the size of your fish and your air fryer.
Check your air fryer manufacturer’s instructions to see whether preheating is recommended.
Serving suggestions
Serve your air fryer whole fish with Caribbean favorites like rice and peas, cucumber salad, or provisions such as sweet potato or dasheen.
I also like it with a little pepper sauce on the side for some extra heat. You can squeeze fresh lime over the fish just before serving, too.
Storage and reheating
Store leftover fish in an airtight container in the refrigerator for up to 2 days. Reheat it in the air fryer at 350°F until heated through, checking after about 5 minutes so the fish doesn’t dry out.

Frequently Asked Questions
Absolutely! While snapper is a great option, you can also use tilapia, branzino, or any other fish that fits in your air fryer. Just adjust the cooking time based on the size of the fish.
For this recipe, I recommend using foil because it keeps the filling together and helps trap moisture around the fish as it cooks. Use a piece large enough to wrap the fish completely, and make sure the foil is secured so it doesn’t move around inside the air fryer.
For an approximately 8-ounce whole snapper wrapped in foil, cook it at 370°F for about 30 to 35 minutes. Cooking time will vary with the size and thickness of the fish, so check that the flesh is opaque and flakes easily at the thickest part.
The fish is done when the flesh is opaque and flakes easily with a fork at the thickest part. If you’re checking with a food thermometer, fish should reach an internal temperature of 145°F.
